Nam Jim Tang Guar (Cucumber & Chili Relish)

Serve with Satay and Peanut Sauce.

2 cups thinly sliced cucumber
2 tablespoons lime juice
2 tablespoons water
2 tablespoons fish sauce
2 tablespoons palm sugar (or brown sugar)
2 tablespoons green onion coarsely chopped
1/2-2 teaspoon chili paste, to taste
2 hot red chilies, sliced
Combine ingredients in bowl, toss to coat cucumber, and store in refrigerator at least 4 hours (will keep several days). To serve, drain cucumbers and place in bowl.
