Oven Fried Herb Chicken

Serves 4-6
This very tasty dish is extremely easy & very popular. My parents served it
very often when Dad's grad students had spent a cold day working with the
animals on the farm.
Mix the flour and herbs in a small bowl. Coat each chicken piece
with the mix and place into an oven-proof casserole dish. Dot each
piece with butter. Bake, uncovered, at 475oF for 15 minutes. Cover
and cook 35-50 minutes longer until done.
