Gazpacho

I had been looking for a good recipe for Gazpacho, and when Evelyn Bundesmann made this for our dinner coop, I knew I had found it. A great summer soup. This recipe is from Mollie Katzen's book The Broccoli Forest.
Serves 6-8.

4 cups tomato juice
1 small onion diced finely
2 cups chopped tomatoes
1 cup green pepper chopped
1 teaspoon honey
1 clove garlic minced
1 large cucumber diced
2 scallions, chopped
juice of 1/2 lemon
juice of 1 lime
2 tablespoon wine vinegar
1 teaspoon tarragon
1 teaspoon basil
1/2 teaspoon ground cumin
1 teaspoon Tobasco sauce
2 tablespoon olive oil
salt and pepper to taste

Combine all the ingredients in a large bowl and puree in a blender or food processor. Chill for 2 hours and serve.
